Fresh Pasta 

Our fresh pasta is easy to use and deliciouso. It cooks in only 2 to 4 minutes, so make sure it's the very last thing you cook. Whether you pair it with any of our delicious sauces or with EVOO & freshly grate parginiano reggiano, it's alway a favorite.

Pizza Dough

Freshly made pizza dough is avaialbe fresh or frozen.  If you're making pizza tonight, get the fresh; if it will be longer than that before you use the dough you'll want to get the frozen. Our 1 1/2lb. dough will make one standard 16" pizza, two thin 12" pizzas or two calzones.

The dough has been packaged before it has risen so you will need to let it come to room temerature for 1 -2 hours to let the yeast activate. You can tell because the dough is very soft to the touch, ready to be stretched onto your stone, screen or pizza pan.

Preheat your oven to 475 degrees. Put a small handful of flour or cornmeal on a clean counter top and then remove the dough from the bag. Dredge the dough in the flour, front and back, so the dough will not stick to your hands as you stretch it. To do this, use your palms and finger tips, or a rolling pin, flipping the dough over a couple of times. After that, you can stretch the dough by hand to your desired size. 

If you are using a pizza screen or pizza pan, apply pan spray before laying the dough down. For pizza stones, spread a little extra flour or cornmeal on the stone. This will keep the dough from sticking to your baking surface. Apply your sauce, cheese and toppings. Brush a small amount of olive oil or vegetable oil to the edges of the dough. Bake 8-10 minutes, or until the crust is golden brown.
